Pre-heat your oven to 350° and grease your cookie sheets or use parchment paper. Add coconut oil and peanut butter into a medium glass bowl, then melt together in the microwave. In a separate bowl, whisk the eggs together with the salt and vanilla. Next, pour the rolled-oats and the remaining dry ingredients into the same glass bowl with the coconut oil and peanut butter. Then add in the egg mixture. Use a spatula to gently mash everything together and then slowly add in the chocolate chips.
Use a large spoon to scoop out cookie dough to the size you desire. Place on cookie sheet 2 inches apart from each other.
Bake for 10-12 minutes. Let set for 3-5 minutes before eating.
